Simple Vegan Waffles

Though it’s hard to believe, I used to hate breakfast food. Because I never really used to eat eggs as a kid (they just never sat well with my stomach), I wasn’t into the whole diner / breakfast thing. Ever since I got older and have started cooking however, I began to love breakfast. Waffles, pancakes, you name it. These waffles are hearty, healthy, and down-right delicious.

The recipe is made out of ingredients that are super inexpensive and are pantry staples. They’ll please your pickiest eater and your favorite breakfast lover. Keep this recipe around so that you can always start your morning on the right foot.

Yields: 2 large waffles

  • 1 cup whole wheat flour (or all purpose flour)
  • 2 T coconut sugar (or any other granulated sweetener)
  • 1 cup almond milk
  • 1/2 ripe mashed banana
  • 2 T baking powder
  • 2 T oil (I prefer coconut)
  1. Mix your dry ingredients in a large bowl (flour, sugar, baking powder).
  2. Next, mash your banana, and then combine it with the almond milk, and oil.
  3. Pour your wet ingredients into your dry and mix until they are well combined.
  4. Fourth, heat your waffle iron and spray it with oil so that your batter doesn’t sick.
  5. Cook your batter in your waffle iron on medium heat until it is brown and crispy.
  6. Once it is lightly browned, you are ready to eat! Serve with maple syrup, lots of fruit, and vegan whipped cream. Enjoy!
