Peanut Butter Stuffed Chocolate Protein Pancakes

Let’s take a minute and talk about these pancakes. I’m 100% certain that they are the best things I’ve ever eaten. They actually make you feel like you’re eating a pile of Reese’s for breakfast. Is there anyone who wouldn’t want that?
Even though the process of making them is a little time consuming, it is so worth it. When I whipped them up this morning, I made 1 batch that served both my mother, and I. Her first words were “this can’t be healthy”. Now that’s when you know it’s a successful recipe!
Yields: 2 Servings
Chocolate batter-
- 1/2 cup oat flour
- 4 Tbsp cocoa powder
- 1/2 scoop of chocolate (or vanilla) whey protein
- 9 Tbsp egg whites
- 3 Tbsp stevia
- 4 Tbsp apple sauce
- 1/4th cup almond milk
Peanut Butter batter-
- 1/2 cup oat flour
- 4 Tbsp pb2
- 1/2 scoop pb (or vanilla) whey protein
- 9 Tbsp egg whites
- 2 Tbsp stevia
- 4 Tbsp apple sauce
- 1/4th cup almond milk
For this recipe, you will need to make two separate batters. First, blend all of the ingredients for the chocolate batter and pour it into a cup. Second, blend all of the ingredients for the peanut butter batter, and pour it into another cup.
To cook, pour your chocolate batter onto a greased pan and let it cook for 5 seconds. Then, grab your peanut butter batter and pour it into the middle of the chocolate batter. This will create a pancake that is peanut butter on the inside, with a ring of chocolate on the outside. Cook the rest of the batter the same way until you run out.
Top with melted peanut butter, chocolate syrup (cocoa powder, vanilla, stevia), chocolate chips, and banana slices.
Tip*** – Be careful not to pour too much chocolate batter for the first layer, because when the peanut butter is poured on top of it, it spreads out a lot, thus, making a huge pancake.
