Pomegranate Tabouli Salad with Wheat Chips

First of all all, what is tabouli? By definition, tabouli is an Arab salad made of cracked wheat that is mixed with finely chopped ingredients such as tomatoes, onions, and parsley. It is delicious. You can pretty much buy it at any grocery store, and it’s super good for you considering it consists of whole grains and vegetables. What can be better than that? Recently, i’ve been really into salads. Even though i’ve always enjoyed typical salads consisting of lettuce and toppings, my eyes have been opened to all of the other salad varieties this world has to offer. Bean salads, corn salads, fruit salads, tomato salads, there are so many different combinations to choose from. The coolest thing about these “salads” is that most of the time, they come about from random ingredients that you happen to have in your refrigerator.
This salad is the product of left over ingredients that I needed to use up. Though I didn’t have high hopes for it, it came out GREAT. It’s so refreshing, satisfying, filling, and chock-full of healthy ingredients. Consisting of 6 different kinds of vegetables and 1 grain, this salad is great for any meal. You can even meal prep it ahead and use it throughout the week for a filling pick-me-up.
Yields: 2 – 3 servings
- 1/3 cup of chopped onions
- 1/2 cup tomatoes
- 1 pomegranate
- 1 cup chopped broccoli florrets (raw)
- cilantro (optional)
- 3 T lemon juice
- 2 T olive oil
- 1 cup tabouli (can sub for brown rice)
- salt and pepper to taste
For the wheat chips:
- 2 whole wheat tortillas
- olive oil
- Preheat your oven to the broil setting (550 degrees).
- Prepare your tabouli according to the package directions.
- Grab your tortilla and coat both sides evenly with olive oil.
- Once coated, cut it into 8 triangles (like a pizza).
- Place it in your preheated oven on a cookie sheet to bake for around 2 minutes on each side (keep an eye out though because things can burn VERY quickly on the broil setting).
- While that’s cooking, chop up your onions, tomatoes, pomegranate, broccoli, and cilantro.
- Once all of your tabouli is done, pour it into a box bowl and mix it with all of your other ingredients.
- Once they are mixed together and your chips are done, you are ready to eat!
