Sweet n’ Spicy Roasted Chickpeas

I looooove snacking. I’m 100% one of those people that eats when they’re bored and pretty much thinks about food all day long hahah. The other day someone at work looked at me and said “literally every time I see you you’re eating” LOL. Should I take that as a compliment orrrrr? 😉
Because I love to always have food in hand haha, over the years i’ve learned that I had to find some healthy snacks. These chickpeas are my GO TO. I swear I go through a couple cans a week, they’re soo addicting! This simple snack takes less than 15 minutes to come together, and only 3 of those are prep time! The rest is just for cooking. I KNOW your going to love them!

Yields: 2 servings
- 1 can (15.5 oz) garbanzo beans (chickpeas)
- 1/2 tsp chili powder
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1 tsp italian seasoning
- 1 tsp coconut sugar (or brown sugar)
- salt & pepper to taste
- Turn on the broil setting on your oven (550 degrees).
- Pop open your can of chickpeas, and drain the liquid. Then, rinse them off in a strainer.
- Once they are rinsed and drained, place them into a bowl.
- Add 1/2 Tbsp olive oil to the chickpeas, and mix it around.
- Next, in a small bowl, add all of your seasoning ingredients. Once they are mixed together, add them to the chickpea + oil mixture.
- Stir everything together making sure that the seasoning is easily distributed, then pour them onto a lightly sprayed (oiled) pan.
- Pop them into the oven, and cook them on top shelf (needs to be close to the heat for them to crisp & broil) for about 12-14 minutes.
- Once they look crispy, take them out and let them cool for a few minutes.
- Once they are no longer burning hot, dig in!
*I love to eat these by themselves as a snack or in rice as a small meal.
