Worlds Easiest Crepes

So every time I’ve tried to make crepes in the past, they’ve always been too eggy, or hard to roll up. Today when I woke up, I had an epiphany on how to make the perfect crepe (is it weird that food is my first thought when I wake up?). I realized that in my previous attempts, I had over complicated the recipe and put too much thought into it. This is honestly the easiest recipe ever and took me about 10 minutes to make. Yields: 3
Crepes

  • 1/2 cup of oats
  • 1/2 cup of egg whites (2 eggs might would probably work the same way but I haven’t tried it)
  • 1/2 cup of milk
  • 2 tbsp stevia
  • 1 tbsp psyllium husk powder (flax seed should work as well, or even protein powder)

That’s it! Combine the ingredients above in a blender and blend until smooth. Pour 1/3 of the batter into a heated, sprayed pan, and then proceed to cook the crepes one at a time. Cook on medium for about 2-3 minutes on each side, or until you think they look as done as you like them. Once you have 3 crepes, roll them up with a filling of your choice. I used strawberries and bananas that I tossed in honey.
